  6. four 1-pound lamb shanks
  7. Kosher salt
  8. 2 tablespoons extra-virgin olive oil
  9. 1 medium red onion
  10. ½ cup water
  11. 2 tablespoons red wine vinegar
  12. 6 warmed pita bread
  13. tomato-ginger compote
  14. 4 ounces feta cheese


Preheat the oven to 325 degrees Fahrenheit. Take a small bowl and mix the lemon zest with the pepper, oregano, onion powder, garlic powder, and 2 teaspoons of salt. Rub the mixture all over the lamb shanks. Take a large cast-iron casserole, heat the olive oil, add the shanks and cook for 5 to 7 minutes until it browned all over. Cover and bake the shanks in the oven for about 2 hours. In a medium-sized bowl, toss the onion with vinegar; and season it with salt. Leave it at room temperature and toss a few minutes until it softens. Set the carrousel over high heat, add the water and boil, and scrap up the browned bits on the bottom. Pour the liquid into a small bowl and skim the fat from the surface. Pull the meat from the bones in large shreds, and discard the fat and gristle. Transfer the lamb to a bowl. Add the cooking juices, toss well and seasons with salt. Spoon the shredded lamb into the pita and spread a thick layer of tomato-ginger compote on top. Garnish with red onion and feta and serve.
